BLACK TEA is fully oxidised. It is first withered, then rolled once only, fully oxidised and then dried. The tea looks black in colour and is referred to as RED TEA in China.
SINGLE ORIGIN teas each have their own unique aroma and flavour, due to the terrior in which each tea is grown. Differences in altitude, sun exposure, rainfall and soil content will all contribute to the unique flavour and aroma profiles found within each tea.
Our CLASSIC BLENDS are based on traditional recipes, some of which are over hundreds of years old. We will use sometimes up to four different teas for our blends. These teas might be from one country, or a blend of different countries and regions, making a complex and interesting cup of tea!
