The two most popular ways of brewing tea are the "Western Method" and "Gong-Fu" brewing. The brewing method you choose depends on which tea you are brewing.    
Western Method
The western brewing method is the most well known tea brewing method in Australia.
​This method follows the process of adding 1-2 teaspoons of tea to your teapot, adding enough hot water to fill a cup or mug and steeping the tea leaves for an extended period of time- usually between 2-4 minutes. You then may add milk.

Once the leaves have been steeped once, it is difficult to get a nice tasting cup of tea if you were to re-steep the same tea leaves. Essentially you use the tea leaves once and then discard the used tea leaves. Many teas, especially those grown in India and Sri Lanka are produced especially for this style of tea brewing.

Gong-fu Method
The gong-fu brewing method is the most popular tea brewing method in China, and therefore, its teas.  
This method uses smaller teapots, more tea leaves and less water to brew the tea, compared to the western method. The tea leaves are steeped for a very short amount of time, often only 30 secs or less for the first infusion, with the infusion time increasing with each subsequent infusion.
​This method is designed to get the most out of the tea leaves as you can re-steep the tea leaves multiple times. Each infusion may bring out different elements in the tea, aromas,  flavours and mouthfeel. The brewing of the leaves continue until the leaves are spent & the flavour is gone. Most Chinese and Japanese teas are suited to this style of brewing.
